  1. Heat a large wide based pan over a medium heat. One hot, turn down a little and slowly fry the onion, garlic and celery until soft (about 6 mins). Then add the red pepper and paprika and fry for another 2 mins before adding the chorizo. Fry for another 10 mins..
  2. Meanwhile, in a separate pan, heat 1 tbsp olive oil over a medium heat and add the chicken thighs with salt and Pepper. Cook on one side until golden, then flip and cook for another few minutes (you don’t need to cook them through completely).   3. Once the chorizo is soft and the chicken has been added, add the rice and fry for a minute. Then add the stock and simmer for 20 minutes or until all of the stock has been absorbed.
