  2. {Prepare of big sized onions.

Steps to make Chole bhature/ puri:

  1. Soak 1 cup chickpeas in water overnight before cooking.
  2. Drain the water.
  3. Take a medium size pressure cooker and add chickpeas. Add 3 cups of water and 1/4 tbsp salt.
  4. Let the chickpeas cook well.. At least 7-8 whistles for about 15 mins..
  5. Once done drain all the water and keep the cooked chickpeas aside.
  6. Now for making the masala - chop all the veggies and put them in the blender jar.
  7. Make a fine paste. Do not add any water to it. Keep the jar aside.
  8. For making the gravy - heat 2-3 tbsp of oil in a pan or kadai.
  9. Add chillies, cumin seeds, tej patta, 2 cinnamon, cloves, cardamom. Let it fry.
  10. Now add the paste and mix well..
  11. Keep stirring until the paste gets thick.
  12. Then add all the dry spice powders - turmeric, red chilli powder, coriander powder, dry mango powder..
  13. Mix the spices well and sauté for 2-3 mins.
  14. Now add chickpeas and mix well.
  15. Pour 1-1.5 cups of water. Add according to the consistency you want..
  16. Add salt to taste and store properly.
  17. Now let it cook for 12-15 mins and don’t cover the pan.
  18. Add 1 cut green chilli and 1 tbsp chole masala powder.
  19. Stir and cook well for sometime..
  20. Garnish with coriander leaves.
  21. Serve.
